Pear Chicken Curry [18 Aug 2009|05:33pm]

So one of my local grocery stores has these little electronic kiosks throughout the store where you can place a deli order, print a shopping list (if you entered one on your home computer), browse the store special offers, print coupons etc. One of their offerings is called Recipe Center and I have gotten many a tasty recipe from them over the years.

The printouts have one great drawback - they are printed on that shiny paper using thermal printing that is nice and cheap, and it shows because the ink wears off in nothing flat. Usually this is not an issue, all the recipes have a little blurb "courtesy of:..." at the top so I can pretty much always find it later online to bookmark if I really liked it.

But the following recipe, while it says Courtesy of USA Pears, is not found on the USA pears website. So I thought I would both share this tasty fairly simple recipe with you all and put it online so I can bookmark it for when the paper copy I have becomes unreadable.


2 ripe pears (1 peeled and cored, 1 pureed) (My note - I never bother to peel)
1 Tbsp vegetable oil
1 C. Onion, diced
1 Tbsp curry powder (I use a fairly sweet one; it does not specify)
1 tsp. garlic, minced
1 tsp. salt
3/4 tsp. ground ginger
3/4 tsp. ground cinnamon
1/4 tsp. ground pepper
1 1/2 lb boneless skinless chicken breast halves, cut into 1" cubes
14 oz coconut milk
1/3 cup raisins

What to do -

1) Heat oil in large frying pan over medium heat. Add Onion, curry powder, garlic, salt, ginger, cinnamon, and pepper and saute 5 min, stirring occasionally, until onions are transparent.
2) Add chicken, and continue to saute another 5 min, stirring occasionally until browned. Add the pureed pear, coconut milk, and raisins. Simmer for 5 minutes. Cut remaining pear into 1/2 inch cubes and add to curry. Simmer for 5 more minutes and serve.

Their serving suggestions are steamed rice (which is what I tend to do), Naan or warm pita bread and hummus, and Iced Chai tea. Recommended wine pairing is Riesling/Rhine or Pouilly-Fuisse (I don't tend to drink wine as an everyday thing, but if a recipe recommends a wine I'll let others know about it).

I found this recipe to be easy and tasty. It serves 4 (and I think that is realistic since my husband and I always have leftovers, which we don't always for some recipes that supposedly serve 4) and reheats well the next day for lunch.

Honey Lime Chicken [02 Feb 2009|07:09pm]

I found this recipe easy to make and very tasty. I have made it both as written, and without cutting the chicken breast into strips and increasing the cook time in step 2 to 25 minutes. Worked fine. This serves 2, but I have also doubled and tripled it in order to have leftovers with no problems. I like it because it is quick, easy, and I tend to have all ingredients on hand.

1/3 cup all purpose flour
1/4 tsp cayenne pepper
10 oz boneless, skinless chicken breast, cut into strips
1 Tbsp butter
2 Tbsp lime juice
2 Tbsp honey
1 Tbsp brown sugar
1 tsp worcestershire sauce

1)In a large resealable plastic bag combine flour and cayenne pepper. Add chicken, a few strips at a time, and shake to coat.
2) In a skillet, brown chicken in butter on all sides
3) Combine the lime juice, honey, brown sugar, and Worcestershire sauce; pour over the chicken. Cook for 1-2 minutes or until the juices run clear and the sauce is thickened.

I usually make rice to go with this.

Open faced Chili Grilled cheese sandwich [17 Nov 2008|10:24am]

Easy and quick meal for tonight is going to be an open sandwich, which is not really a sandwich.


Slice of bread
Slice of cheese*
a bit of butter
some chili**

Take the slice of bread, butter one side put on a skillet over medium heat. Put the slice of cheese on the bread and continue cooking until the bread is toasted and the cheese is melty. Place on plate or in bowl and pour chili on top. You can use as little or as much chili you want.

This is a great meal for when a grilled cheese is just not enough and when you don't have enough chili leftover for a full bowl.

*You can use more than one slice, depends on how much cheese you like.
**Works best with homemade chili

Help With Healthy Apple Recipes [08 Sep 2008|11:22am]



I found out that the apple tree several doors down isn't a crab apple tree, but is now producing wonderful red apples. What's more, another neighbor has made several apple pies from them and assures me that the apple neighbor has said that all are welcome to them!! And they are delicious!

So last night I got out my kitchen uppsie daisy and went and picked a couple dozen (the ones I could reach with my fear of falling), and then peeled them. They weren't the pretty ones, but the weird shaped and ones with bad places on them. I can get more as well!

Charles, the PieNeighbor, told me that he brings apples to a boil, then turns down the flame and when the apples are soft, mashes them and adds sugar for great apple sauce.

Then I got to wondering. Can I do something else, like an apple crisp or cobbler or whatever? I am not going to attempt a pie, but would LOVE to do something HEALTHY with them.

What do I do? And should I avoid white flour? Processed sugar? What should I do? Maybe something with oatmeal?

Hummus with roasted butternut squash [25 Jul 2008|03:01pm]

1 lb. peeled butternut or buttercup squash, cut in 2-inch chunks (about 4 cups)
1 tsp. chopped fresh rosemary, or ¼ tsp. dried
2 Tbs. olive oil, divided
1 19-oz can chick peas, rinsed and drained, or 2 cups cooked chick peas
2 Tbs. lemon juice
1 tsp. ground cumin
¼ tsp. hot red pepper sauce
Salt and pepper to taste

1. In a large bowl, toss squash with rosemary and 1 Tbs. oil.
2. Spread squash on a baking sheet lined with parchment paper and roast in a preheated 400°F oven for 40 minutes, or until tender and browned. Cool
3. In a food processor, chop chickpeas finely. Add lemon juice, remaining 1 Tbs. oil, cumin and hot pepper sauce. Combine well.
4. Add roasted squash and puree until smooth. Add salt and pepper if necessary. (If mixture is too thick, add a little yogurt or water to thin.)

Makes about 3 cups.

Throughout the world there are only four actual kinds of tea that come from actual tea leaves, and those are; white, green, oolong and red or black. There are numerous variations that individuals throughout the years have created so that there is some variety to the tea menu.

For example, individuals have been known to come up with their own kinds of herbal teas from bush or tree leaves which in reality are not related in any way to the one true tea tree, which is those of the camellia sinensis. One specific variation is known as the cocoa tea, which is further elaborated on here in this article.

Where did Cocoa Tea Actually Come from?

Being a regional delight, cocoa tea came from and was initially made popular in Soufriere St. Lucia, in the West Indies in the Caribbean. Cocoa tea promptly came into existence back in a time when an entire meal may have consisted of a drink accompanied by some extra filling parts.

So the result of this drink was to fit such a need. Citizens of Soufriere St. Lucia, at approximately the time of cocoa tea's inception, essentially needed to create or find foods which were efficient, economical and which were created to feed all members of their family properly. Cocoa tea was therefore essentially made up as a breakfast delicacy that fit this bill.

What Precisely is Cocoa Tea?

Cocoa tea is in truth not actually a tea at all and in fact does not even incorporate any tea at all. It is cited as a tea nevertheless because a cinnamon stick and bay leaf are steeped in boiling water in a similar way which an individual would steep genuine tea leaves in order to create regular tea.

In addition to the traditionally utilized bay leaves and cinnamon , the conventional cocoa tea recipe likewise includes that of cream or milk, as well as sugar, water, nutmeg, cornstarch vanilla. Today, cocoa tea might be served on a side of bread. In a previous era, however, flour dumplings were boiled inside the drink in order to make it a complete meal.

Thus as you can see, cocoa tea is not actually a tea, not even truly in the loosest sense. Instead of dinner, I'm sending desert!  This is a CAKE not a loaf:
I used to make this all the time; today I found a copy of it in a pile of papers.  Last time I make it my 1stborn was about a year old.

<lj-cut text="Lemon Poppy Seed Cake">

The Cake:

2 cups all purpose flour (2¼ cups cake & pastry)
1 tbsp baking powder
¾ tsp salt
1 1/3 cups sugar
1 1/3 cup butter
1 ½ tsp vanilla
4 eggs
½ cup milk
1/3 cup poppy seeds

Combine flour baking powder and salt.  Cream butter – gradually add sugar and vanilla.  add eggs.  Add dry ingredients alternatively with milk,  mix on low then fold in poppy seeds.    bake 350O F 40 min in two pans or one bundt

The Filling:

2 eggs
6tbsp fresh lemon juice
2 tbsp grated lemon rind
1 cup sugar
¼ cup butter
Beat eggs, juice and sugar in a saucepan add butter cook over low stirring constantly until thick.  allow to cool completely.

The Icing:

½ cup butter
4 cups sifted icing sugar
2 tbsp fresh lemon juice
1 tbsp rind
¼ cup half and half.

But seriously, folks. I bought tempeh on a whim the other day, but I have no idea what to do with it. I read that you can make a good mock chopped liver with it, but I have no idea how. If you know that, or if you have any preferred ways of preparing tempeh, I'd appreciate it.

When I was a kid, my grandmother used to make Tamale Pie, and it was good. She started with cornmeal, and cheese, and black olives, and honestly I have no idea what else was in it.

Now, I am a person who routinely checks out interesting/bizarre cookbooks from the library, and I try whatever recipes catch my fancy. There is a cookbook called Mini-Mart a la Carte (by Christopher Rouser and Victoria Traig, c. 2005, Chronicle Books, San Francisco, ISBN 0-8118-4319-X -- I highly recommend it; it's very funny and pretty useful) which contains a blindingly easy recipe, which is amazingly reminiscent of my grandmother's Tamale Pie.

Low-Rider Lasagna

12 corn tortillas, torn into bite-size pieaces
1 15-ounce can each of pinto beans, corn, and diced tomatoes (I drained the corn and beans, but not the tomatoes)
1 lb. grated cheddar cheese
(I added about a half-cup of sliced black olives)

Preheat oven to 350 degrees F; grease (or spray with a PAM-like material) a 13x9-inch pan; put in half the tortillas, beans, corn, tomatoes, cheese, (olives), then the other half, ending in cheese. Cover tightly with foil; bake for half an hour; remove foil; bake for another fifteen minutes.

This is good to bring to a potluck when your kids haven't told you there is one until just before the event. LOL!

hi, by accident my brother bought several cans of campbell's creamy chicken noodle soup instead of regular chicken noodle soup. unfortunately, no one in my familly will eat this soup. any suggestions on how to use it in another dish to get them to eat it?

i was thinking of cooking chicken breasts in it, instead of a marinade, but then there are all those loose noodles. any suggestions would be greatly appreciated. thanks.

I have two (2) boxes of regular lasagne noodles. I have a whole bunch of ricotta (40 oz). I have a whole bunch of mozarella (about 3 lbs). I have at least a cup of grated parmesan. I have a little cottage cheese. I have a quart or more of homemade meat sauce. I have several large jars of commercial tomato sauce.

It's rainy and cold.

Give me quantities or proportions to make either two 9x13-inch pans' worth, or one broiling pan's worth.

recipe: bean tostadas with corn salsa and avocado [21 Feb 2007|09:51pm]

This recipe is a diet recipe, but it's really, really easy and really, really good. And I imagine that if you use regular sour cream and full-fat cheddar cheese, it'll taste even better.

From Cook It Quick!

4 6-in corn tortillas
1 15.5-oz can pinto or black beans, drained and rinsed
1 c fresh salsa
1 8-oz can low-sodium corn kernels, drained
3/4 c reduced fat shredded sharp cheddar cheese
1 c shredded romaine lettuce
1/2 avocado, diced
1/2 c fat free sour cream
2 scallions, thinly sliced
2 tbs chopped cilantro (optional)

Preheat oven to 450. Arrange tortillas in single layer on baking sheet and bake until crisp and light brown around edges, 5-7 min.
Meanwhile, in a small saucepan, mix the beans and 1/2 c of salsa; cook, stirring as needed and mashing the beans until heated through, about 5 min. In a small bown, mix remaining 1/2 c of salsa and corn.
Place torillas on plates. Spread each with bean mixture, then top with cheese, lettuce, corn mixture, avocado, sour cream, scallions and optional cilantro.

The corn and bean mash can be made in advance and refrigerated. I made both on Monday night, intending to have a tostada, and then deciding after the beans were cooked that I wasn't in a Mexican mood after all. Plus, since the recipe makes 4 servings, and I only serve me, I have leftover corn salsa and bean mixture hanging out in twotupperwares in the fridge anyway.

I was going to meet my sister's boyfriend for dim sum in Chinatown, but he got work and had to catch an earlier flight back home. Left with nothing to do until tonight, I decided to cook something special for myself for the first time in a year. I made lamburgers. I had two. They were delicious.

1 lb lean ground lamb
1 tsp salt
1/2 tsp garlic powder
2 tsp rosemary
pinch pepper
6 tbs crumbled feta

Mix everything together but the feta. Shape into 4 patties. Cook on one side in nonstick skillet until browned, about 5 min. Flip burgers over and sprinkle on cheese. Cover and cook until cheese is a little melty and burgers are cooked through, about 3 more min. Serve with pita, cucumber sticks and yogurt dill dip. Speedy and scrumptious.
